Over the past years we have been selling heaps of roasted cocoa nibs to Azvex Brewery here in Liverpool. They have the wildest setup and use only the best ingredients, and they are as nerdy about their beer as we are about our chocolate, passion all the way.
After their 12% imperial stout is infused with our nibs, they bottle their cans and we take what on the bottom of the tank. We bring this back to our production space and roast new nibs and infuse them with their stout. Once fully infused, we start the process of slowly drying the nibs in order to preserve the deep stout flavour.
We decided to make this beer with our Öko Caribe beans from Dominican Republic, as these beans carry the flavour of the stout forward, making this a deep but not bitter 64% dark chocolate.

Adriano de Jesús Rodríguez and Gualberto Acebey Torrejón founded Öko Caribe in 2006 aiming at raising the standard of quality cocoa in the country.
Öko Caribe creates a sustainable environment for the smallholder farmers they work with, maintaining a close relationship with the 180 surrounding workers in the area.
They ferment and dry at their facility respecting protocols that ensure only the highest quality cocoa makes it through.
